IEP and Future Readiness for those students with significant disabilities

I am having difficulty with writing an compliant IEP for some of students with significant disabilities (non-verbal, autism) whom when given academic tasks or a picture job-inventory will do whatever it takes to finish the task. Such as, pointing to the last picture choice given as the answer. I am told that I have to pick a job/profession that he/she is interested in, but she has shown no interest except for her sensory items and music that she likes to listen to. It has taken 3 years to get this student to be compliant with a lot of prompting to use a broom during our in-school jobs. Any ideas? Thanks
